Strawberry Lemonade

Have lemons, make lemonade.  I had bought a lot of lemons, and they needed to be used, but I had no inclination to do anything complicated, which in this case meant turning on the oven.  My sidekick suggested lemonade and counted out five lemons, as he remembered that’s what we used that last time that we made lemonade (using Caitríona’s recipe).  I noticed the dregs of a punnet of strawberries and decided that this lemonade would have a red twist and so this recipe was born.

You’d expect strawberry lemonade to be pink, but it’s more red than pink. It’s very refreshing and tastes even nicer if left in the fridge overnight.

Strawberry Lemonade

Ingredients

6 lemons

6 strawberries

90g Caster sugar

100ml boiling water

Pour the boiling water into a heatproof jug and stir in the caster sugar until it’s completely dissolved.

Cut the lemons in half and squeeze them with a juicer. Pour the juice through a sieve to catch the pips and pith, then add to the sugar and water mixture.

Extract the juice from the strawberries by passing them through a sieve.  Add the strawberry juice to the mixture and add water to taste. This will depend on how strong you like your lemonade and how juicy your lemons are.  We added 700ml cold water and made about a litre of “red lemonade”.  (You could use the pulpy bits of the strawberry to make a Banana Mushie.)

Refrigerate and serve.
